Hi sisters,
I weighed in this morning...lost 1.6 lbs.
No new recipe at weight watchers this morning...our leader is out of town. The substitute was AWESOME. I really wanted to ask her when she led meetings so I could switch, but I'm starting to make some acquaintences with the 7am group, so I will keep going.
Here's what we are having for dinner tonight:
Grilled Scallop K-Bobs and curried rice
2 tsp canola oil
1 lg onion, chopped
1 c basmati rice (we are using brown jasmine rice - thanks Celia)
1 tsp curry powder
1 3/4 - 2 cups fat free reduced sodiom chicken broth
1 tsp salt
1/2 tsp pepper
2 Tb. golden raisins
2 TB fresh cilantro
1 LB sea scallops
1 large peach pitted and sliced (oops I sliced 2 - oh well)
1 1/2 cups cherry tomatoes
1. Get the grill ready (med-high heat)
2. heat oil in saucepan over med-high heat. Add onion, cook, stirring frequently, until it begins to soften, 3 minutes. Stir in the rice, curry, broth, 1/2 tsp salt and 1/4 tsp pepper, bring to a boil. Reduce heat, cover and simmer until the rice is tender and liquid is absorbed. Stir in the raisins and cilantro, and keep warm.
3. Thread the scallops, peach slices and cherry tomatoes alternately onto 8 (6-8 inch) metal skewers. Srinkle with the remaining 1/2 tsp salt and 1/4 tsp pepper; lightly spray with olive oil nonstick spray. Place the kebobs on the grill riak and grill until the scallops are opaque in the center, 2-3 minutes on each side. Serve with the rice pilaf

Are you saying 7AM on a SATURDAY morning?!? That alone would make one lose weight, wouldn't it?!?
yes, i weigh in at 0700 on Saturday morning...can you believe I voluntarily get up to let someone tell me how much weight I have or have not lost? That's why I snapped the lady's head off the first week when she said cheerily "congratulations, you lost 1 pound!"
I'm getting better. Really.
Weigh-to-go LISA... So proud for your 1.6 lose..That trek around the zoo/park is a very good start for kickin-butt next week too.
I will post on Tues, since I weigh-in at work on our OFFICIAL scale.LOL. How were the kabobey things? Or was that ribs I smelt on the barbe? Here it is chicken and redbeans..ummmm and homemade (breadmachine) wheat bread for dessert.LOL CYA tomorrow.
